Restaurant Pay Ladder: Server and Line Cook to Chef to Food Service Manager

Restaurant work has a reputation for low pay, but the career ladder is real and moves faster than many people think. The federal wage survey also counts tips for servers, which changes how the front and back of house compare. Here is what each step paid in May 2025.
The pay ladder at a glance
| Occupation | U.S. jobs | 10th pct. | Median | 90th pct. | Typical entry education | Projected growth 2025–35 |
|---|---|---|---|---|---|---|
| Server (waiter/waitress) | 2,270,910 | $18,100 | $35,230 | $64,720 | No formal educational credential | +2.0% |
| Restaurant cook | 1,409,890 | $28,700 | $37,390 | $47,900 | No formal educational credential | +12.1% |
| Chef / head cook | 200,040 | $37,900 | $62,470 | $98,560 | High school diploma or equivalent | +6.6% |
| Food service manager | 238,430 | $45,960 | $69,390 | $107,640 | High school diploma or equivalent | +5.8% |
Wages are May 2025 estimates from BLS Occupational Employment and Wage Statistics, May 2025; growth and education from BLS Employment Projections, 2025–35. The 10th and 90th percentiles show the range from entry-level or lower-paying employers to the most experienced or best-paid workers. For comparison, the median for all U.S. occupations was $50,980.
Front of house vs. back of house
Servers earn a median of $35,230 and restaurant cooks $37,390. BLS’s wage survey includes tips in reported wages (see the OEWS technical notes), so the server figure reflects what workers actually take home before taxes, not just the cash wage. Server pay varies far more than cook pay: the 90th percentile for servers is $64,720, compared with $47,900 for cooks.
Cook to chef
Chefs and head cooks earn a median of $62,470, $25,080 more than restaurant cooks. According to BLS, most chefs learn through work experience; some attend culinary programs or apprenticeships. Restaurant cooks are projected to grow 12.1% from 2025 to 2035, so demand for experienced cooks should stay strong.
Into management
Food service managers earn a median of $69,390. BLS says they typically need a high school diploma and several years of experience as a cook, server or supervisor. Food safety certification, inventory and labor-cost control, and scheduling are the skills that usually get people promoted.
Where chef / head cooks earn the most
State medians for chefs and head cooks vary widely. The five highest-paying states in the May 2025 survey:
| State | Median annual wage | Employment |
|---|---|---|
| Rhode Island | $79,930 | 740 |
| Hawaii | $77,360 | 1,240 |
| District of Columbia | $76,420 | 2,020 |
| Washington | $76,010 | 5,320 |
| North Dakota | $74,740 | 100 |
Pay tips for restaurant workers
- Know your cash wage rules. Under federal law an employer may pay tipped workers as little as $2.13 an hour in cash wages only if tips bring them to at least the $7.25 federal minimum; many states require more.
- Managers can’t share the tip pool. Federal rules bar managers and supervisors from keeping employees’ tips.
- Ask for a title with the duties. If you are already ordering, scheduling or training, ask for the kitchen manager or sous chef title and pay band.

Extra tax point for tipped staff: for tax years 2025 through 2028, workers in occupations that customarily received tips can deduct up to $25,000 of qualified tips a year, phasing out above $150,000 of modified AGI ($300,000 joint). Mandatory service charges such as an automatic 18% large-party fee don't count as tips. Details: IRS: What the "No Tax on Tips" deduction means for you.
